Money-saving tip: This soup is delicious topped with Parmesan cheese – either fresh or dried. The cheaper (but still delicious) option is dried Parmesan cheese. You can also sometimes find fresh Parmesan cheese on the grocery store salad bar. Buy just as much as you need.
SOUP-MAKING TIPS
Making delicious soup is all about adding layers of flavor. Here are my favorite tips for making a great pot of soup:
- Start with broth/stock/bouillon: Practically every soup starts out with a base of chicken, beef, fish or vegetable stock. But for a really delicious pot of soup, you need to take it further. Only using chicken, beef or vegetable broth would result in a pretty bland pot of soup.
- Add spices: Adding appropriate spices will up the flavor of your soup. Garlic powder and onion powder are good in most soups. Depending on the type of soup you’re making, other options are paprika, cayenne pepper, parsley, celery salt, Italian seasoning, or Mexican spice blend.
- Add sweetness/acid/heat: If your soup is lacking something, try adding some sweetener (brown sugar or honey work well in many soups), acid (a teaspoon or so of apple cider vinegar can wake a pot of soup up), or some heat (like sriracha sauce or hot sauce). In this recipe, I’ve added Dorothy Lynch Dressing & Condiment which adds slight sweetness and tang/acidity to the soup.

Spinach Tomato Tortellini Soup INGREDIENTS
- 1 tablespoon olive oil
- 1 yellow onion, chopped
- 4 garlic cloves, minced
- 4 cups water
- 2 large chicken bouillon cubes
- 28-ounce can chopped tomatoes
- 1/2 cup Dorothy Lynch Dressing & Condiment
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried basil
- 1/4 teapsoon dried oregano
- Fresh cracked black pepper
- 9-ounce bag fresh cheese-filled tortellini
- 4 cups packed spinach, roughly chopped
- Fresh or dried Parmesan cheese, for topping
- Fresh basil, cut into thin ribbons, for topping
INSTRUCTIONS
- Sauté onion in olive oil in a large soup pot over medium-high heat. Cook, stirring until onions soften. Add garlic and cook for 30 seconds.
- Add water, bouillon, tomatoes, Dorothy Lynch Dressing & Condiment, and spices. Turn heat to medium and bring to a simmer. Cook for about 10 minutes to allow flavors to meld.
- Add pasta and cook for 5 minutes, allowing the pasta to cook.
- Last, add spinach and cook for another minute. If the soup is too thick, you can add another cup of chicken broth (water + bouillon).
- Serve, topped with Parmesan cheese.
