The Soda siphon (also known as the seltzer bottle or siphon seltzer bottle) story starts in 1790, the concept was introduced in France, with self-pressurized carbonated beverages. The modern siphon as we know it was created in 1829, when two French gentlemen patented a hollow corkscrew which could be inserted into a soda bottle and, by use of a valve, allowed a portion of the contents to be dispensed while maintaining the pressure on the inside of the bottle and preventing the remaining soda from going flat.
Soda siphons were very popular in the 1920s and 1930s during the speakeasies generation and could be found in almost every bar, Tavern and at home. The rise of bottled carbonated beverages and the destruction of many of the siphon manufacturers plants in Eastern Europe during World War II led to a decline in their popularity in the years after the war. Slowly buy surly over the last 60 years production has resumed and Soda siphons remain as popular today as ever and are widely used in bars to make drinks and enjoyed at home by seltzer lovers all over the world.
Soda siphons are excellent for making alchohol beverage infusions aswell as carbonating they are pretty versatile and are fun little things to make delicious beverages and to impress your friends or customers. You can use either Co2 soda chargers, Or N20 Cream chargers with your soda siphon each providing a different result. Infusions can be done in minuites using N20 which would under normal natural circumstances otherwise take weeks. For example, when using cacao, a couple of minutes in the alcohol and you start pulling astringency out of the nibs.

Carbonating a liquid involves filling a soda siphon with your liquid of choice, plus carbon dioxide. The more Co2 disolved into the liquid the fizzier your finish product will be. For best results it is recomended to use cold liquids as Co2 is more soluable in cold liquid than it is warmer liquids. tips: If you're just making long drinks (mules, tonics, etc.), you may want to just carbonate water and add your ginger/tonic/whatever syrup to that and then use this housemade soda in your cocktails.. Did somebody say presseco? buy low priced or mid range white wine. Carbonate it and bingo your own personal supply of prosecco / cava / champagne for any event on demand! It's quite a show. By creating your own Seltzer at home using a Soda siphon is huge benifit of not having to carry bottles or cans from the grocery store (esp if you live in a city) is a huge plus. 8G Soda chargers are fully recyclable and produce much less waste than their counterparts: Bottled or tinned soda water.
After infusing/carboating Juice, Wine, Cocktails etc sugars from the liquids can remain in the bottle and can clog the insides or cause mold/bacteria. It is pretty easy to avoid such issues by following this short guide how to clean your soda siphon.
De pressurise your bottle in your sink by holding the trigger in realsing all internal pressure and any remaining liquid.
Unscrew the head of the soda siphon and charger holder.
Take out the straw and gasket.
Rinse all parts with warm water.
Fill the bottle with warm water and swirl water inside of bottle, then empty water and repeat as many times as you feel is nessasery.
Fill bottle with warm water and add soap. swirl around and empty.
Rinse out the siphon body again using warm water.
Compress the heads release trigger and run both ends of the head under the warm water tap, Give it a little shake and put on a dry surface to dry.
If you clean your soda siphon shortly after using it should last you for many years in good working condition with no problems.
