INSTRUCTIONS:

First, prepare the tequila jelly by mixing tequila, sugar syrup and lemon juice. Mix gelatine using 2 tablespoons of boiling water. Stir it until the gelatine gets dissolved. Add it to the tequila-lemon-sugar mix. Strain the contents into a whipped cream dispenser. Cap tightly and charge the mix with two nitrous oxide whipped cream chargers. Shake well to release the gas after every application. Then, let it set for at least 2 hours, shaking it once every half an hour.
For the long island iced tea, you will require a chilled tall glass. Mix vodka, gin, tequila rum and triple sec and some ice in a cocktail shaker. Shake the contents well so that they combine well. Partly fill the glass with ice. Add some tequila jelly over the ice, and sieve the multi-liquor mix over the ice to fill 2/3rd of the glass.

STRAWBERRY FOAM MARGARITA

The final product will be light pink in color with a dash of dark hue at the bottom.

INGREDIENTS:

  • 1.5 lb of fresh strawberries
  • 3-4 tablespoons of Cointreau
  • 1/4th cup of sugar
  • 1 teaspoon of Blue Curacao
  • 2 cups of crushed ice cube
  • 150 ml of tequila
  • 100 ml of lime juice
  • 1 large pinch of salt

INSTRUCTIONS:

For strawberry foam, first hull the strawberries. Make a puree out of them and add sugar to it. Heat it on a low flame until you achieve a jelly-like consistency. Strain it and add 3-4 tablespoons of Cointreau and Blue Curacao, so that the color changes. Divide the mix into 2 parts. Put one part into a whipped cream dispenser, and double charge the content with 2 whipping cream chargers. Shake well after every application so that everything mixes well. Remove the charger and place the lid tightly and keep it in the refrigerator. It can be stored for up to a week, and you can also use it as a delectable dessert topping.
Now, put crushed ice, lime juice, tequila, a pinch of salt, and the remaining half of the non-aerated strawberry puree in a blender, and blend the contents well. Then, chill the cocktail glass in the refrigerator for 10 minutes, and then rub its edge with lime and then dip it in sugar or salt, as per your liking. For serving, place a generous amount of strawberry foam at the bottom of the cocktail glass, and pour the tequila mix to the brim. Garnish with a lime slice.

DARK DESIRE

The name itself is so intriguing, right? Plus, if you love chocolate, it’s will be tough for you to forget this drink for quite a long time. With a hint of chocolate, topped with a chocolate-based liquor and served with a light chocolate cream foam, this chocolaty cocktail makes for an ultimate party drink. INGREDIENTS:

  • Chocolate Foam:
  • 2 tablespoon of crème de menthe
  • 4 ounces of finely chopped/grated cooking chocolate
  • 2 tablespoons of heavy cream
  • Drink:
  • 4 ounces of white rum
  • 2 ounces of Kahlua
  • 1 cup of ice cubes
  • Chocolate curls

INSTRUCTIONS:

For the chocolate foam, heat the cream until it is just about to boil. Remove it from the heat source and add to it crème de menthe. Now, put cooking chocolate in a bowl and pour the cream from the first step onto it. Cover the contents and let both rest for 5 minutes. Then, remove the lid and stir until the mix is melted and turns glossy. Beat the mix for 2-3 minutes, and then put it inside a whipped cream dispenser. Charge it with a cream charger 580g and shake the mix well. Remove the 580g N2O cream charger and cap the dispenser tightly. Keep it in the refrigerator for at least an hour.
For the drink, pipe half of the chocolate mix at the bottom of a martini glass, so that it creates a mound at the bottom. Combine Kahlua with white rum and a lot of ice cube inside a cocktail shaker, and strain half of the content into the glass carefully while avoiding pouring it directly over the chocolate foam. Garnish it with chocolate curls and serve quickly.
